After foraging for your own ramps (wild leeks), you will, of course, want some recipes to go with them! While ramps can be substituted into many dishes, this cheesy ramp frittata utilizes the bulb and leaves!

Versatility of Frittatas

A frittata is a crust-less quiche. And much like a quiche, you can throw almost any ingredient in it! This cheesy ramp frittata is very simple, but you can change and add ingredients as you want! Go ahead! Add some sausage! Change the cheese! They really can be anything you want.

Also, if you have your own dairy and egg-producing animals, this recipe can actually come 100% from your own farm! Except for the salt, but you can leave that out if you want.

Cheesy Ramp Frittata

There is one piece of equipment that I find necessary for this recipe- a cast-iron skillet. The eggs will not stick, for real! You could use another oven-safe skillet, but I think cast-iron is a must in every household.

The ingredients for this recipe are quite simple:

  • 1/2 cup ramp leaves
  • 1/2 cup ramp bulbs
  • 8 eggs
  • 1/3 cup milk
  • 1/2 tsp salt
  • 2 tbsp butter
  • 1/2 cup mozzarella cheese (plus some for sprinkling on top)

First, preheat oven to 375° F. Take the ramp bulbs and roughly chop. Melt the butter in your cast-iron skillet and saute the ramp bulbs until just beginning to brown. Whisk your eggs with the milk and salt. Then roughly chop the ramp leaves and add them with the cheese into the ramp mixture and stir.

Next, pour the egg mixture over the sauteed ramps and top with additional cheese. Then just pop it into the preheated oven for 25 minutes or until the cheese is browned and the center is firm.

Finally, remove from the oven and allow to cool slightly. The egg will pull away from the skillet as it cools and then you can easily remove it to serve, if desired!

  • 10" Cast-iron skillet
  • Spatula

Ingredients

  • 8 Eggs
  • ⅓ cup Milk
  • ½ tsp Salt
  • ½ cup Mozzarella cheese plus extra for sprinkling on top
  • ½ cup Ramp leaves roughly chopped
  • ½ cup Ramp bulbs roughly chopped
  • 2 tbsp Butter

Instructions

  • Preheat oven to 375° F.
  • Melt butter in skillet over medium heat. add ramp bulbs and saute until just beginning to brown. Turn off the heat.
  • Whisk together eggs, milk, and salt in a bowl. Add the ramp leaves and cheese and stir.
  • Pour egg mixture over the sauteed ramps in the skillet and top with cheese (about ¼ cup). Cook in the preheated oven for 25 minutes or until cheese is browned and center is firm.
  • Allow to cool until egg pulls away from the skillet edge. Remove to a serving plate, if desired.
